One Potato Two Potato adds a new twist to an
old favorite, the potato.
This book is a chronicle of the spud. It includes
historical and nutritional facts, illustrations,
trivia, helpful hints, as well as nearly 300
recipes dedicated to the potato.
The recipes were compiled by a Prince Edward
Islander Janet Reeves who has spent most of
her life here on "Spud Island".
The book has a convenient "Lay Flat" binding
that lets the pages stay open without breaking
the spine.

| Potato Biscuits These biscuits are quick to make and bake in only 15 minutes! 1 1/2 cups all-purpose flour 1 tbsp baking powder 1 tsp salt 2 tbsp shortening 1/2 cup cold mashed potato 1/2 cup cold milk Preheat oven to 400F. Combine flour, baking powder and salt. Cut in shortening. Add potato and mix thoroughly. Add enough milk to make a soft dough. Roll lightly to 1/2-inch thickness. Cut with biscuit cutter. Bake 12 to 15 minutes. Serve hot. Makes 12 biscuits. |
